Nothing makes eating catfish at the lake any better than checking out the lake after dinner.





It's official. You can make pesto out of anything. I've actually never successfully made pesto, but I have wanted to. Found a recipe today for a mint pesto (3 cups mint, 1/4 cup salted almonds, olive oil & salt) and was inspired because we have mint growing at the house.

Well, all of our mint amounted to 1/2 cup, so I had to improvise. We had a bowl of leftover salad in the fridge that was romaine lettuce and feta cheese. I pulled the green leafy parts off the lettuce and dumped it in there with the feta. I added minced garlic and even some cashews that happened to be sitting on the counter.

It is fantastic!! I realize the picture looks a bit like pea baby good, but I promise it was quite tasty. We added the pesto to the top of the chicken Alfredo I served over shell pasta.




Jessie sat like this for about 10 minutes the other day. No idea what she was doing, but she's cute no matter what she does.

Dalton was telling me about a video game that he is going to design when he grows up (that's probably the first mention of anything he'll do when he grows up). I asked if I could be the first to play it and he agreed.

He called me to his room about a half hour later and told me, "Because you're my mom, I'm gonna get you that video game for free!" Sweet boy. I'll take him up on that.

Jessie Anne has really gotten into identifying different types of vehicles on our rides to and from school together. Today we saw the fire truck and a bus. Then she started hollering that she was a "ship truck." I could not figure out for the life of me what she was talking about.

We were at a red light, so I got a chance to look around and sure enough, at the gas station diagonal to us was a Frito Lay truck with a bag of Doritos spilling down the side of the truck. That was her chip truck!

We were watching CBS Sunday Morning show and they had a piece on jellyfish. Jessie was in the room and saw one of the pictures and exclaimed, "Popcorn fish!"

Maggie rolled over from a rest with Boyd and asked, "Daddy, do you like to take care of your family?" Boyd replied that yes, it was about his favorite thing.

Maggie responded, "Well, that means that you want to go get me some chocolate milk." It was too cute to refuse.
Finally getting some bell peppers on the plant that Boyd and Maggie learned how to plant at the library. Plant is in a large paint bucket with holes drilled in the bottom.

There are a lot of blooms on it and she is very excited to have grown them herself. Maybe she might actually try one!
